What is the difference between the open profile, lattice design, and egg crate style freezer spacers and what applications work best for each? (need more info)

A) Open Profile (injection molded) Plastic Freezer Spacers are designed for tempering or taking frozen product and warming them up. They get brittle in the cold. B) Lattice Plastic Freezer Spacers (such as SKU#s 2547002 and 2547003) are heavy (15.5 lbs/unit) and very rigid in design. They are very popular in the fish and dairy industries. C) Egg Crate Plastic Freezer Spacers have the most flexible and non-brittle construction of the 3 spacers. They are also the most economical. Designed as early as the 1970s, the Egg Crate style freezer spacers are very popular in the meat and poultry industries.
